  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries hulled and chopped

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, beat the egg and then add milk, vegetable oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the chopped strawberries.
  • Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
  • Serve warm or at room temperature.
