Ingredients
  

  • 2 grilled chicken breasts sliced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cup black beans rinsed
  • 1 cup corn drained
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup olive oil
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions
 

  • Marinate chicken breasts in olive oil, lime juice, cumin, and chili powder for at least 30 minutes.
  • Preheat your grill or grill pan over medium heat.
  • Cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  • Prepare the salad base with fresh salad greens.
  • Chop red and yellow bell peppers and add them to the salad.
  • Include black beans and corn into the mix.
  • Add sliced avocado for creaminess and flavor.
  • Slice the grilled chicken and arrange it on top of the salad.
  • Drizzle with a cilantro-lime vinaigrette before serving.
