Ingredients
  

  • 2 pounds of potatoes russet or Yukon gold
  • 1/2 cup of butter
  • 1/2 cup of milk or heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of cooked bacon crumbled
  • 1/4 cup of chopped green onions
  • Salt and pepper to taste
  • Optional: sour cream for serving

Instructions
 

  • Peel and chop the potatoes into even-sized pieces.
  • Place the potatoes in a large pot and cover with cold water.
  • Add a pinch of salt and bring the water to a boil.
  • Cook the potatoes until fork-tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add butter and milk (or cream) to the potatoes.
  • Mash the potatoes until smooth and creamy.
  • Stir in the shredded cheddar cheese, crumbled bacon, and green onions.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with extra cheese and green onions if desired.
