Ingredients
  

  • 2 cups of potatoes about 2 large
  • 1 cup of all-purpose flour plus extra for dusting
  • 1 egg
  • 1 teaspoon of salt
  • Optional: 1/4 cup grated Parmesan cheese

Instructions
 

  • Boil the potatoes in salted water until tender, about 20 minutes.
  • Drain and let the potatoes cool slightly.
  • Peel the potatoes and mash them until smooth.
  • In a bowl, combine the mashed potatoes, flour, salt, and egg.
  • Mix until a dough forms, adding extra flour if sticky.
  • Lightly flour a clean surface and divide the dough into four pieces.
  • Roll each piece into a long rope about 1/2 inch thick.
  • Cut the ropes into 1-inch pieces to form the gnocchi.
  • Use a fork to indent each piece for texture.
  • Cook the gnocchi in boiling salted water until they float, about 2-3 minutes.
