Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 4 carrots sliced
  • 4 potatoes diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a skillet over medium-high heat.
  • Brown the beef cubes in batches until all sides are seared.
  • Transfer the browned beef to the crockpot.
  • Add the chopped onion and minced garlic to the skillet, sauté for 2-3 minutes.
  • Pour the onion and garlic mixture into the crockpot.
  • Add the sliced carrots and diced potatoes to the crockpot.
  • Stir in the beef broth, tomato paste, thyme, salt, pepper, and bay leaf.
  • Cover the crockpot and set it to low for 8 hours or high for 4 hours.
  • Stir occasionally if possible, and check seasoning before serving.
  • Remove the bay leaf before serving and enjoy!
