- 2 lbs beef chuck cut into 1-inch cubes
- 4 carrots sliced
- 4 potatoes diced
- 1 onion chopped
- 3 cloves garlic minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 2 tablespoons olive oil
Heat olive oil in a skillet over medium-high heat.
Brown the beef cubes in batches until all sides are seared.
Transfer the browned beef to the crockpot.
Add the chopped onion and minced garlic to the skillet, sauté for 2-3 minutes.
Pour the onion and garlic mixture into the crockpot.
Add the sliced carrots and diced potatoes to the crockpot.
Stir in the beef broth, tomato paste, thyme, salt, pepper, and bay leaf.
Cover the crockpot and set it to low for 8 hours or high for 4 hours.
Stir occasionally if possible, and check seasoning before serving.
Remove the bay leaf before serving and enjoy!
