Ingredients
  

  • 4 cups cornbread cubed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions
 

  • Prepare the cornbread and allow it to cool completely.
  • Cut the cornbread into 1-inch cubes.
  • In a large bowl, combine the cubed cornbread with cherry tomatoes, cucumber, red onion, and bell pepper.
  • Add the chopped parsley and basil to the bowl.
  • In a separate bowl, whisk together the olive oil and apple cider vinegar.
  • Pour the dressing over the salad mixture and toss gently.
  • Season with salt and pepper to taste.
  • Let the salad sit for at least 10 minutes to allow flavors to meld.
  • Serve chilled or at room temperature, garnished with additional herbs if desired.
