Ingredients
  

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup cherry tomatoes halved
  • 4 cups mixed greens
  • 1/4 cup red onion thinly sliced
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Wash the broccoli and cauliflower under cold water.
  • Cut the broccoli and cauliflower into bite-sized florets.
  • In a large mixing bowl, combine the broccoli and cauliflower florets.
  • Add the halved cherry tomatoes and sliced red onion to the bowl.
  • In a separate small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  • Pour the dressing over the vegetable mixture.
  • Gently toss everything together until well coated with dressing.
  • Lay the mixed greens on a large serving platter or individual bowls.
  • Top the greens with the broccoli and cauliflower mixture.
  • Garnish with fresh parsley before serving.
